Grilled salmon with nectarine salsa

Easy yet impressive, this grilled salmon with nectarine salsa is perfect for summer months when you don’t want to heat up the kitchen!

  1. Combine the nectarines, onion, jalapeño, cilantro, ginger, and salt in a medium bowl. Drizzle with the honey and lemon juice. Stir gently to combine.
  2. Preheat a grill to medium high heat. Brush the salmon fillets on both sides with canola oil. Season with salt and pepper.
  3. Place the salmon, skin side up, on the grill. Grill for 3–4 minutes with the lid closed, or until grill marks appear and the salmon easily releases from the grill. Carefully flip the salmon and continue cooking, with the lid closed, until the salmon is cooked to your liking. I did another 3–4 minutes for medium well.
  4. Remove salmon from the grill and place on a serving platter. Top with the nectarine salsa.

Notes

Increase the honey to 1 tablespoon if the nectarines are not very sweet.
