Start by creating a two-zone fire.
Charcoal grill: heap the coals on one side of the grill.
Gas grill: turn the burners on half of the grill, leave the other side off.
Use a heavy bottomed saucepan to make the cheese sauce on the grill.
It'll come together in just a few minutes.
Have some pretzels ready for sampling! :)
Place a foil pan on the unheated side of the grill. Cook brats in the beer for 15 minutes.
Grill the onions over the direct heat while the brats are cooking.
Remove the brats from the beer and place on the direct heat. This will create nice grill marks.
Grill until cooked through, about another 10 minutes.
Slice the brats, place on a bun, and top with grilled onions and cheese sauce.
