Cheesy Zucchini Casserole

You'll need: Zucchini Eggs Onion Biscuit mix (such as Bisquick) Shredded cheddar Dried oregano Vegetable oil Salt & pepper

Chop the onion, then chop the zucchini into half-inch slices.  You'll need 6–7 cups total, which is about 4 small zucchini or 2–3 medium zucchini.

Place the zucchini, onion, half of the shredded cheddar, and biscuit mix (like Bisquick) in a large bowl. Toss gently to combine.

Whisk the eggs and oil until blended.  Pour over the zucchini mixture and toss to combine.

Transfer the zucchini mixture to a 8-inch or 9-inch casserole dish. Top with the remaining shredded cheddar.
