Easy Peach Cobbler

You'll need: Fresh peaches Biscuit mix (such as Bisquick) Milk Butter Cornstarch Cinnamon 

Peel the peaches, remove the pits, and cut into thin slices. Peach peeling tip: cut a small "x" in the bottom of each peach. Place in boiling water for 30 seconds, then a bowl of ice water. The peels will slip off.

Place the sugar, water, and cornstarch in a small saucepan. Bring to a boil and let cook for 1 minute. This will create a nice glaze for the peaches.

Place the peaches and cornstarch mixture in a baking dish. Dot with butter. Stir together the biscuit mix, butter, milk, and sugar.  Drop spoonfuls on top of the peaches.

Bake for 20–25 minutes at 400°F.  Tip: place a sheet pan underneath the baking dish, just in case the juices run over!
