Quarter peaches and remove the pits.  Brush each peach quarter with vegetable oil to prevent it from sticking to the grill.

Preheat a grill to medium-high heat, and clean with a grill brush. Place the quartered peaches on the grill.

Grill for 2–3 minutes per side, or until grill marks appear.  The key to this recipe is using just-ripe peaches.

Beat heavy cream in a stand mixer (or with a hand mixer) until soft peaks firm. Fold in honey and vanilla extract.

Allow the peaches to cool slightly before topping with whipped cream. Sprinkle with pistachios and garnish with fresh mint.
