Ingredients:
– 1 (8 oz) can crushed pineapple
– 1 (11 oz) can mandarin oranges
– 1 cup mini marshmallows
– 1 cup shredded sweetened coconut
– ¾ cup sour cream
Drain mandarin oranges. Pour 1 tablespoon of pineapple juice out of the can and into a large bowl, then drain the crushed pineapple.
Add the sour cream to the 1 tablespoon pineapple juice.
Stir the mixture until smooth.
Tip: you can use either regular or light sour cream for this recipe.
Add the drained mandarin oranges, drained pineapple, coconut, and marshmallows.
Stir gently with a spatula to combine.
Place the salad in the refrigerator for at least 1 hour, or up to 8 hours, to allow the flavors to blend.
When ready to serve, transfer the salad to individual serving dishes or a big serving bowl.
Serve while still cold.
