Strawberry Icebox Cake

You'll need: Chocolate wafer cookies Strawberries Heavy cream Powdered sugar Vanilla extract 

Place the heavy cream, powdered sugar, and vanilla in the bowl of a stand mixer. Mix on medium speed until soft peaks form. You can also use a hand mixer if you prefer.

Remove the stems and hulls from the strawberries. Cut into thin slices.

Line a loaf pan with plastic wrap. Spread a layer of whipped cream into the bottom, followed by a layer of chocolate wafers, then a layer of strawberries.

Repeat the layers until all of the whipped cream, wafer cookies, and strawberries are used.  Cover and refrigerate for at least 4 hours.

Turn out onto a serving platter, and top with additional crushed wafers. Cut into slices and serve! For the full recipe, click  "Get the recipe" below!
