You'll need: Flour Oats Cinnamon, ginger & nutmeg Brown sugar Egg Milk Baking powder & salt Apples Butter

Peel and chop the apples.  You can use any apple that you like. Since this muffin is only lightly sweet, you can use a sweet apple or a tart apple. (I used Fuji).

I like using a hand mixer for this recipe, but you can use a stand mixer or mix it by hand.  In a large bowl, mix the butter and brown sugar until fluffy, then stir in the egg.

In another bowl, mix together the flour, oats, baking powder, salt, cinnamon, nutmeg, and ginger.  Add that to the brown sugar mixture, alternating with the milk until a dough forms.

Stir in the chopped apples.  Take care not to over mix the batter, which can result in a tough/chewy muffin.

Transfer the batter to a greased muffin tin, and bake at 375°F for about 20 minutes, or until cooked through.  For the full recipe, click  "Get the recipe" below!
