– 4 slices bacon – 1 yellow onion, chopped – ½ lb ground pork – 1 lb ground beef (85% lean) – ⅔ cup breadcrumbs – 2 eggs, lightly beaten – 2 t. worcestershire sauce – ⅓ cup chopped parsley – 4 oz sharp cheddar – 1 teaspoon kosher salt – ⅓ cup ketchup – 1 tablespoon ranch dressing

Cook and crumble the bacon. Cook the chopped onion in the bacon grease, then set aside.  Then, cut the cheddar cheese into half-inch cubes.

Place all of the ingredients in a large bowl. Mix very gently with your hands to combine. Do not over mix, which will make the meatloaf tough.

Turn the mixture out onto a sheet pan with edges.  Form the mixture into a meatloaf shape, about 12 inches long by 5 inches across.  Place in a 375°F oven and cook for 45 minutes.

Combine the ketchup and ranch dressing in a small bowl. Pour it over the top of the cooked meatloaf, then return to the oven and cook for 10 minutes more.
