Banana Bread with Pecans

You'll need: Ripe bananas Butter Vanilla Sugar Eggs Flour Baking soda + salt Chopped pecans

Cream the butter and sugar together with a stand mixer or hand mixer until light and fluffy.

Add the eggs and vanilla, and beat until combined. Then drop in the bananas, and beat until smooth. No need to mash the bananas first—that's what the mixer is for!

Fold in the flour, baking soda, salt, and pecans.  Stir only until all of the ingredients are combined (over mixing can cause the banana bread to be tough).

Pour the batter into a 9x5-inch loaf pan lined with parchment paper.  Top with remaining pecans.
