Grated carrots, raisins, and chopped walnuts are the stars of these muffins.
A combination of allspice, nutmeg, cinnamon, and ginger give them amazing flavor!
I like using a food processor to quickly grate the carrots. A box grater works, too.
I don't recommend using store-bought pre-shredded carrots, which are too thick for this recipe.
There's only ½ cup brown sugar in the whole batch of muffins, so they're just lightly sweet. Add more sugar if you like them on the sweeter side!
You can make a batch of these muffins in under 30 minutes.
I like serving them with a cup of coffee or tea.
