Cheesy Chicken Enchiladas

You'll need: Tortillas Chicken thighs Shredded Mexican cheese Queso fresco Onion Enchilada sauce  Black beans Olive oil Salt

Cook chicken in a skillet, then chop the chicken.  Cook the onion, then add the chopped chicken, black beans, queso fresco, and 1/3 cup of the enchilada sauce.

Pour some enchilada sauce into a casserole dish. Place 1/2 cup of the chicken mixture into a tortilla and roll. Repeat with the remaining tortillas, and place in the dish.
