You'll need:
Tortillas
Chicken thighs
Shredded Mexican cheese
Queso fresco
Onion
Enchilada sauce
Black beans
Olive oil
Salt
Cook chicken in a skillet, then chop the chicken.
Cook the onion, then add the chopped chicken, black beans, queso fresco, and 1/3 cup of the enchilada sauce.
Pour some enchilada sauce into a casserole dish. Place 1/2 cup of the chicken mixture into a tortilla and roll. Repeat with the remaining tortillas, and place in the dish.
Cover with enchilada sauce and Mexican blend cheese, and bake. Before serving, top with more queso fresco and chopped cilantro.
