Defrost puff pastry according to package directions.
Use a 2-inch cookie cutter to cut 20 circles in the pastry. Use a 1-inch cookie cutter to cut a circle in the middle of TEN of those circles.
Replace all of the rounds that you cut out, then brush the whole puff pastry sheet with a beaten egg (this will help them stick together AND get golden brown!)
Place the whole 2-inch circles on a sheet pan, then top with the remaining circles (the ones with the 1-inch circle in the middle).
Chill for 30 minutes.
Bake at 400°F for 16–20 minutes.
Let cool slightly, then take a paring knife to cut gently around the inside circle. Remove the inside circle to create a hole for filling.
Once cool, fill with your favorite chicken salad, egg salad, ham salad, etc.
