You'll need: - Mangos - Sugar - White rum - Club soda - Fresh mint - Limes - Ice

Purée two mangos in a food processor or high speed blender.  If you can't find fresh, you can use defrosted frozen mango.

Combine ⅔ cup sugar and ⅔ cup water in a saucepan. Bring to a simmer, then take off the heat and let cool. You just made simple syrup!

Place 2 lime wedges and several fresh mint leaves  in a tall glass.

Use the end of a wooden spoon (or a muddler) to mash the lime and mint leaves.

Stir in 2 tablespoons mango purée, 2 tablespoons simple syrup, and one shot of rum; stir to combine.  Fill glass ¾ of the way with ice and top with ½ cup club soda.

Garnish with a slice of mango and fresh mint leaves.  You can also make this cocktail in a pitcher!
