Ingredients: – 2 lbs ground beef – 1 cup old fashioned oats – 1 egg, beaten – 1½ cups ketchup, divided – 1 yellow onion – 1 green pepper – 1½ teaspoons salt

Finely dice the green pepper and onion.  We want small pieces here so the meatloaf stays together!

Reserve ½ cup of ketchup  for the top.  Place the remaining 1 cup ketchup and the rest of the ingredients in a large bowl.

Mix very gently to combine all of the ingredients. I use my hands here, because over-mixing it will result in tough meatloaf.

Divide the mixture  into muffin tins. I got 18–20 mini meatloaves from this recipe. Tip: the finished meatloaves freeze well!

Bake for 25 minutes at 350°F.  Remove from the oven, spoon the reserved ketchup over the top, and bake for an additional 5 minutes.

Let cool for 5 minutes, then run a butter knife around the edges of each muffin cup to loosen the meatloaves. Serve while warm.
