Mini Cherry Cheesecakes

You'll need: Vanilla wafers Cream cheese Eggs Sugar Lemon juice Vanilla extract Cherry pie filling

Place cupcake liners in a 12-cup muffin tin.  Place one vanilla wafer in each cupcake liner (add two wafers if you like a thicker crust!).

Place the softened cream cheese, eggs, sugar, and vanilla extract in a large bowl. Mix on medium speed with a hand mixer until smooth.

Spoon the mixture into the cupcake liners, filling ¾ of the way up.  Bake for 18–20 minutes at 350°F, or until the filling no longer jiggles when you jostle the pan.

Top each cheesecake with cherry pie filling (or your favorite fruit pie filling) and serve!  For the full recipe, click  "Get the recipe" below!
