Use a vegetable peeler to peel long strips off the cucumber (3 or 4 strips around to create stripes).
This isn't essential but creates the prettiest sandwiches!
With a hand mixer, mix the softened cream cheese, Italian dressing mix, and mayonnaise in a large bowl.
Spread 1–2 tablespoons of cream cheese on a slice of cocktail bread. (I used pumpernickel, you can also use rye bread.)
Then top with a cucumber slice and a sprig of fresh dill.
Serve these sandwiches within an hour or two of making them for best results.
