You'll need:
Chicken breasts or thighs
Mayonnaise
Parmesan
Breadcrumbs
Salt & pepper
Paprika
Dry mustard
Place the breadcrumbs, grated parmesan, dry mustard, and paprika in a large resealable plastic bag.
Tip: use real parmesan (not the stuff in the green can, which won't melt properly).
Brush the chicken with a thin layer of mayonnaise.
The fat in the mayo will keep the chicken breasts juicy.
Place one chicken breast at a time into the bag of breadcrumbs.
Shake gently to coat and repeat with the remaining chicken pieces.
Bake for 20–22 minutes at 425°F, or until the chicken reaches 160°F.
