with goat cheese & jam

Cut defrosted puff pastry into 2x2 inch squares. Using a pizza cutter makes this even easier!

Place the puff pastry pieces into an ungreased  MINI muffin tin.  Press down gently in the center to form a cup.

Add a dollop of jam and a few pieces of crumbled goat cheese into the center of each cup. Use two different flavors of jam for variety!

Bake at 400°F for 14–18 minutes, until golden brown on the edges. Let cool for 1 minute and remove promptly from the muffin tin.

These can be served warm or at room temperature.  You can replace the goat cheese with feta cheese or cream cheese if you'd like!
