Place the olive oil and butter in a large skillet over medium LOW heat.
Allow the butter to melt, then cook the garlic for 30 seconds.
Season the shrimp with salt and pepper, and place in the skillet in a single layer.
Cook for 1–2 minutes on one side, then flip and cook for 1–2 minutes on the other.
Shrimp cooking tip:
The shrimp should have a gentle "C" shape when cooked through (see the shrimp on the right above).
Overcooked shrimp will form an "O" and will be tough and chewy (see the shrimp on the left).
Repeat the cooking process with any remaining shrimp.
Keep the heat on medium low so the garlic doesn't burn!
Remove from the heat, stir in the lemon juice, and top with chopped parsley.
