Zucchini Banana Bread

You'll need: Bananas Zucchini Butter Sugar Eggs Vanilla Sour cream Flour Baking powder, baking soda Salt, cinnamon

Shred the zucchini and place in a colander.  Press on the zucchini with a spatula to release the excess water.

Separate the egg yolks from the egg whites.  Beat the egg whites with a mixer until light and fluffy. Remove from the bowl and set aside.

Place the butter and sugar in the bowl. Mix until light and fluffy. Add the egg yolks, vanilla, sour cream, bananas, and grated zucchini. Mix until combined.

Fold in the dry ingredients, then gently fold in the egg whites. The egg whites will keep the loaf light and fluffy! Pour into a loaf pan and bake for 50–60 minutes at 350°F.
