Strawberry Bread

This easy quick bread is made with lots of fresh strawberries!

Ingredients
  

  • 2 large eggs
  • ½ cup vegetable oil
  • 2 cups fresh strawberries, cleaned, hulled, and sliced
  • 1 cup sugar
  • cup flour
  • 1 teaspoon baking soda
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt

Instructions
 

  • Preheat oven to 350°F. Grease a 9x5 inch loaf pan with cooking spray.
  • Place the eggs and vegetable oil in a large bowl. Beat on high with a hand mixer until fluffy.
  • Add the strawberries and beat on medium until the berries are crushed. Add the sugar, and beat until combined.
  • Add the flour, baking soda, nutmeg, and salt. Stir with a spatula just until combined. Do not overmix.
  • Pour the mixture into the prepared loaf pan, and bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool for at least 20 minutes in the pan before removing and placing on a wire rack to finish cooling.
  • Serve plain, with butter, or with cream cheese.

Notes

This recipe is best with fresh, ripe strawberries. If the berries are hard or very white on the inside, they will be difficult to beat into the batter. If your berries aren't quite ripe, consider using a stand mixer instead of a hand mixer, or crushing them with a fork and/or very finely chopping them knife before adding them to the egg and vegetable oil mixture.
