1½lbstop sirloincut into thin strips (or substitute ground beef)
2tablespoonsbutter
2green onionschopped (see notes for sub)
¼cupwhite wine
⅛teaspoonblack pepper
For garnish: fresh chopped parsley
Instructions
Stir 1 packet onion soup mix into 1 pint sour cream and set aside.
Pat dry 1½ lbs top sirloin (sliced) with paper towels.
In a large skillet over medium heat, melt 2 tablespoons butter. Add the beef and cook until golden brown on the bottom (you may need to do this in batches, depending on the size of the skillet), about 3–5 minutes. Flip and cook until lightly browned on the other side.
Remove the beef from the skillet and set aside.
Add 2 green onions (sliced) to the skillet. Cook, stirring occasionally, until soft, about 2 minutes.
Add ¼ cup white wine to the pan, scraping up any brown bits on the bottom of the pan.
Add ⅛ teaspoon black pepper and the onion soup + sour cream mixture to the skillet. Stir to combine.
Add the beef back to the skillet. Cook over low heat until the beef is cooked to your liking, about 2–3 minutes for medium well. Do not overcook the beef, which makes it tough. Do not let the sour cream mixture get above a simmer. High heat can cause the sour cream to separate.
Serve over egg noodles, rice, or mashed potatoes. Garnish with fresh chopped parsley for a pop of color and freshness.
Notes
If you don't have green onions, you can substitute a half-cup of finely chopped yellow onion. Add mushrooms: add a drained can of sliced mushrooms along with the beef at the end OR sauté 8 ounces of sliced fresh mushrooms along with the green onion until soft. I recommend full-fat sour cream for the creamiest sauce. You do not need any salt in this recipe. The onion soup mix has enough salt for the whole dish.Leftovers are delicious and they will keep in the fridge for 4–5 days. Reheat in the microwave or in a skillet on the stovetop.
