Bisquick Peach Cobbler with Fresh Peaches

Ingredients

⅔ cup + 2 tablespoons sugar
1 tablespoon cornstarch
⅔ cup water
5–6 fresh peaches, peeled and sliced
¼ teaspoon cinnamon
6 tablespoons cold butter, divided
2 cups Bisquick
½ cup milk

Instructions

Grease an 8x8 inch baking dish with cooking spray. Preheat oven to 400°F.
Melt 4 tablespoons of the butter in a small dish in the microwave. Place the remaining 2 tablespoons of butter in the refrigerator.
Place ⅔ cup sugar, cornstarch, and water in a saucepan over medium heat. Bring to a boil. Boil for 1 minute, then remove from the heat. Stir in the peaches.
Pour the mixture into the prepared baking dish. Sprinkle the cinnamon over the top.
Cut the remaining 2 tablespoons of butter into 8 pieces, and scatter the butter over the peaches.
In a large bowl, stir together the Bisquick, melted butter, milk, and sugar until a dough forms. Dollop spoonfuls of the dough onto the peaches.
Bake in the preheated oven for 20–25 minutes, or until the dough is lightly browned on top.
Serve with ice cream or whipped cream.

Notes

If you want to use canned peaches, substitute two (15 oz) cans of peaches (packed in juice) for the fresh peaches. Drain the cans of peaches before adding them to the sugar and water mixture.

Reheating instructions: reheat the whole cobbler in the oven (350°F for about 10–12 minutes). You can also reheat slices of cobbler in the microwave.

Freezing instructions: let it cool, then cover with a layer of plastic wrap, then a layer of aluminum foil. Freeze for up to 2 months. Defrost at room temperature for 24 hours before serving.
