1box chocolate cake mixmade according to package directions
8ozcream cheesesoftened
⅓cupgranulated sugar
1egg
⅛teaspoonsalt
1cupchocolate chips
For garnish: powdered sugar for dusting on top
Instructions
Preheat oven to 350°F. Place cupcake liners into 24 muffin cups.
Prepare 1 box chocolate cake mix according to package directions.
In a large bowl, beat 8 oz cream cheese (softened) and ⅓ cup granulated sugartogether until light and fluffy. Add 1 egg and ⅛ teaspoon salt, and beat to combine.
Stir in 1 cup chocolate chips.
Fill the cupcake papers ⅔ of the way full with the prepared cake mix, dividing the batter evenly between 24 muffin cups.
Drop a 1-tablespoon sized portion of the cream cheese filling into the center of the cake batter in each muffin cup. No need to push the cream cheese mixture into the batter; the cake will rise around it as it bakes.
Bake for 18-21 minutes, or until a toothpick inserted into the center comes out clean.
Let cool, and garnish with a dusting of powdered sugar if you'd like.

Notes
Make sure the cream cheese is softened before making the filling. If you want to get started right away, follow these instructions for how to soften butter in the microwave (the method works for cream cheese, too). I tried this recipe with silicone muffin cups and no liners. I preferred them made in a metal pan (they got taller) vs. the silicone pan, but they tasted just the same. You can use whatever chocolate chips you like (semi-sweet, bittersweet, dark, white, or even butterscotch). The cupcakes are really good cold from the fridge! This recipe also works with different flavors of cake mix. How about strawberry cake mix with white chocolate chips in the filling? Or spice cake with butterscotch chips? Lots of possibilities here!
