Really Good Classic Blondies

Perfectly chewy and full of rich butterscotch flavor, these classic Blondies can only be described as really good! Enjoy them on their own, or topped with vanilla ice cream for a real treat.

A Classic Bar Cookie with Rich Butterscotch Flavor

A cup of coffee and a Classic Blondie are just the pick-me-up I need mid-afternoon! These bar cookies are chewy yet soft, with an almost caramel-like flavor from the brown sugar. The pecans add crunch and nutty, toasted flavor.

The blondies also have flavor notes of butterscotch, despite having no butterscotch chips inside. In fact, many older recipes for blondies are called something like “Butterscotch Bars” for the butterscotch flavor that’s created when brown sugar gets baked into the blondies and caramelizes in the oven. I named the recipe Blondies because that’s more well-known today, but this recipe does date back to the 1950s.

I love the blondies on their own, but I’m eyeing a few of the extras for a post-dinner treat: warmed for 15 seconds in the microwave and topped with a scoop of vanilla ice cream.

What You’ll Need

brown sugar, flour, pecans, butter, and other ingredients.
  • You’ll notice this recipe is 100% brown sugar and has no granulated (white) sugar. This is what makes them different from a chocolate chip cookie bars like these Toll House Cookie Bars. The brown sugar creates a deeper caramelized flavor in the blondies.
  • This recipe calls for pecans, but you can substitute any other mix-ins you like.

How to Make Classic Blondies

  1. Cream together the softened butter and brown sugar.
  2. Beat in the egg and vanilla.
  3. Stir in the baking powder, salt, and flour. Then stir in the pecans.
  4. Spread into a 13×9-inch baking dish. I like to line the dish with parchment paper so I can get them out easily for cutting, but you can also just bake them right in the pan.
  5. Bake for 22–26 minutes, or until lightly golden brown on the edges and the dough no longer looks raw in the center.
  6. Cool completely then slice and serve.

Mix-In Ideas

Don’t want pecans? Here are some ideas for mix-ins instead:

  • A different variety of chopped nuts such as walnuts or macadamia nuts
  • Chocolate chips, butterscotch chips, or white chocolate chips
  • Chopped Oreos
  • M&Ms
  • Shredded coconut
  • Dried fruit such as dried cranberries or dried cherries
  • Top with sprinkles (jimmies-style sprinkles work best for baking)
  • Top with a sprinkle of powdered sugar

  • ½ cup butter softened

Instructions
 

  • Preheat oven to 350°F. Line a 13×9-inch pan with parchment paper.
  • In a large bowl, cream the butter and brown sugar until light and fluffy. Stir in the eggs, one at a time, until combined. Stir in the vanilla.
  • Add the flour, baking powder, and salt, and stir just until combined. Stir in the chopped nuts.
  • Spread the dough into the prepared 13×9-inch pan.
  • Bake for 22–26 minutes, or until lightly brown on the edges and the center no longer looks raw.
  • Let cool completely then cut into bars.

Notes

Don’t want pecans? Try walnuts, macadamia nuts, chopped Oreos, M&Ms, chocolate chips, butterscotch chips, white chocolate chips, shredded coconut, or dried cranberries instead. You can also top them with jimmies-style sprinkles before baking.
Store any leftovers at room temperature for up to one week. You can also freeze the bars for up to 3 months.
