Glorified Rice
This cool and creamy rice salad is a nostalgic treat!
Ingredients
- 2 cups cooked rice, chilled
- 1 cup pineapple tidbits, drained
- 2 cups mini marshmallows
- 1 medium apple, chopped into bite-sized pieces
- ½ cup sugar
- 1 cup heavy whipping cream
- For garnish: maraschino cherries

Instructions
- Place the rice, pineapple, mini marshmallows, apple, and sugar in a large bowl. Mix gently, cover, and let sit for one hour.
- In another large bowl, whip the heavy cream to stiff peaks using a stand mixer or a hand mixer.
- Fold the whipped cream into the rice mixture. Refrigerate until ready to serve.
- Garnish with maraschino cherries.
Notes
Make ahead instructions: the salad can be made up to 24 hours in advance. Cover and let it sit in the fridge until you're ready to serve it. It'll keep in the fridge for several days.
You can use either long grain white rice or Minute Rice for this recipe.
Variations: replace the pineapple and/or apples with any one or two of these: mandarin oranges, cherries, raspberries, sliced strawberries, or peeled and sliced peaches. You can also add 1 cup of chopped pecans or walnuts.
Don't want to whip the heavy cream? You can substitute 2 cups of whipped topping in its place. Reduce the sugar by half.
