Glorified Rice, also known as Heavenly Rice, is a sweet mixture of rice, marshmallows, pineapple, and apples in whipped cream. It’s a nostalgic side dish or dessert for a gathering!

Ever had Glorified Rice? While the ingredient lists in many vintage recipes vary widely, this recipe was surprisingly similar from cookbook to cookbook. I found it in a cookbook as far back as 1943, and then again in newspaper clippings into the late 1960’s.
It’s one of those salads that you can’t quite imagine until you actually taste it. I’d say it’s like a cross between rice pudding and pistachio salad. Both my husband and I took one bite out of sheer curiosity, then found ourselves going back for another spoonful and then another.
Several recipes said to garnish it with maraschino cherries or candied cherries, which is an excellent idea—it adds a lovely little pop of color!

Ingredients
The key to Glorified Rice is starting with cooked and cooled white rice. I used a long grain white rice, though Minute Rice works well, too. See “variations” below for more ideas for fruit!
How to make glorified rice
This recipe is quite simple—just mix together the rice, marshmallows, sugar, pineapple, and apple. Let sit for one hour. It’ll release some juices—that’s ok! Leave the juices in the bowl with everything else.
Next, whip one cup of heavy cream to stiff peaks. Stiff peaks don’t droop when you lift the mixer out of the bowl.
Then, just stir everything together. Serve right away or refrigerate for up to one day, and then serve.
Since the Glorified Rice is nearly all white, a little pop of color jazzes things right up. Maraschino cherries or candied cherries are so pretty here. Perhaps even the red and green candied cherries for Christmas!
Storage tips
You can make the Glorified Rice up to 24 hours in advance. Cover and refrigerate until you’re ready to serve it. Any leftovers will keep for several days in the fridge.
I don’t recommend freezing this dish, as the freezing/thawing process will make it quite runny.
Variations
- Want to add a little crunch? Add 1 cup of chopped pecans or chopped walnuts to the mixture.
- Substitute raspberries, cherries, strawberries, mandarin oranges, or peaches for the pineapple and/or apple.
- Don’t have cubed pineapple? Crushed pineapple works great. Just drain it well first.
- Use Cool Whip (whipped topping) in place of the whipped cream. You’ll need about two cups of it. If you choose this route, reduce the sugar to ¼ cup since Cool Whip is sweetened already.

Glorified Rice
Ingredients
- 2 cups cooked rice, chilled
- 1 cup pineapple tidbits, drained
- 2 cups mini marshmallows
- 1 medium apple, chopped into bite-sized pieces
- ½ cup sugar
- 1 cup heavy whipping cream
- For garnish: maraschino cherries
Instructions
- Place the rice, pineapple, mini marshmallows, apple, and sugar in a large bowl. Mix gently, cover, and let sit for one hour.
- In another large bowl, whip the heavy cream to stiff peaks using a stand mixer or a hand mixer.
- Fold the whipped cream into the rice mixture. Refrigerate until ready to serve.
- Garnish with maraschino cherries.
