Old Fashioned Ham Salad

Old-Fashioned Ham Salad is a creamy, flavorful spread that has stood the test of time. It’s the perfect way to use up leftover ham and makes a great lunch on crackers, toast, or tucked into a sandwich.

Have some extra ham? This Old Fashioned Ham Salad is the perfect easy lunch or light dinner.  

After consulting quite a few cookbooks (ham salad wasn’t a common contribution to a church cookbook!), I found a few that were pretty similar: a classic combination of ham, celery, green pepper, mayo, mustard, and hard boiled eggs. It’s simple, and just right.

I sent a sandwich over to our neighbor, who declared that he “should be eating this on the beach”. It’s definitely the perfect warm weather sandwich. I’m partial to putting it on a croissant, but sourdough bread or crackers would be delicious, too.

Ingredients

Oftentimes, simple is best!

chopped ham, green pepper, eggs, and other ingredients.
  • I used a ham steak from the deli section, chopped finely. Leftover ham works well here. You can also grind it in a food processor or meat grinder, if you want it very fine. If you have any more ham to use up, try this classic Macaroni Salad with Ham and Cheddar next!
  • I put hard cooked eggs in nearly ALL of my mayo-based salads (like Macaroni Salad with Shrimp, German Potato Salad with Eggs, Red Potato Salad, etc.). I find that many people really like finding hard cooked eggs as a little “surprise” inside. If you have some extra hard cooked eggs, don’t miss this Egg Salad with Pickles!
  • You can use whatever mustard you have, dijon or yellow.
  • I had some fresh chives already, though a few tablespoons of grated onion would be a nice substitute.

How to Make Old Fashioned Ham Salad

This couldn’t get much easier!

  1. Chop the ham, celery, green pepper, and hard boiled eggs into very small pieces. Fold together with the mayo and mustard. See my egg salad with pickles recipe if you’d like tips on cooking the eggs. I use a steaming method that makes the eggs much easier to peel.
  2. Taste and season with a pinch or two of salt. I like topping it with fresh chopped chives if I’m serving it from a bowl.

Ingredients
  

  • 2 cups finely diced ham
  • 2 hard cooked eggs (or ½ cup more ham)
  • 1 stalk celery finely chopped
  • ½ cup minced green bell pepper
  • ½ cup mayonnaise
  • 1 teaspoon mustard
  • Optional: 1 tablespoon fresh chopped chives or chopped parsley
  • Salt and pepper to taste

Instructions
 

  • Place all ingredients in a large bowl. Fold to combine.
  • Season with salt and pepper to taste (it may not need much).
  • Serve by itself, on sandwiches (I love croissants or sourdough), or with crackers for scooping it up.

Notes

To hard cook the eggs, place them in a steamer basket over an inch of boiling water in a saucepan. Cover and let steam, over medium heat, for 12 minutes. Chill in an ice bath and then peel. (I find eggs cooked with this steaming method are much easier to peel than hard boiled eggs!)
Don’t have chives? Use a couple tablespoons of grated onion instead.
You can use a food processor or a meat grinder for the ham instead of chopping, if you’d like. 
You can use dijon or yellow mustard here.
Leftovers will keep in the fridge for several days. Give it a stir before serving.
