Red, White, and Blue Jello Dessert

Red, White, and Blue Jello Dessert is a nostalgic summertime dessert that’s always a hit at 4th of July parties! The colorful layers will bring a fun, retro vibe to any celebration.

If you’re already a fan of the classic Jell-O poke cake, this dessert is another fun twist on the gelatin trend—just a little more show-stopping.

The recipe for Red, White, and Blue Jell-O Dessert came from a 1980s fundraising cookbook. It’s not just run-of-the-mill layered gelatin, either. It has both cherry pie filling and blueberry pie filling in the outer gelatin layers, plus a lemon-y cream cheese center.

I love how it looks sliced, though you could serve it straight from the dish with a spoon too. Be sure to make it in a glass dish if you have one. The layers look so pretty from the outside.

Ingredients

  • You’ll need three small boxes (3 ounce each) of gelatin for this: cherry, lemon, and berry blue. The original recipe called for blackberry gelatin for the blue layer, which is made by Royal brand. The Royal brand is harder to find, so I swapped in berry blue Jell-O instead.
  • You can use either whipped cream or whipped topping (Cool Whip). It’ll get mixed with cream cheese and the lemon gelatin to form a creamy middle layer.

How to Make a Red, White, and Blue Gelatin Dessert

This is a very simple process, but it takes a bit of waiting for each layer to set up. I refrigerated each layer for about two hours each before adding the next layer, just to be sure it was set.

  1. Mix the berry blue gelatin with boiling water, then stir in the blueberry pie filling. Pour in a 13×9-inch dish and refrigerate until set (about 2 hours).
  2. Mix the lemon gelatin with boiling water, then beat in the cream cheese and stir in the whipped cream. Spread over the blue layer and refrigerate until set.
  3. Mix the cherry gelatin with boiling water, then stir in the cherry pie filling. Pour over the white layer, and refrigerate until set.
  4. Be sure the dessert is fully chilled before serving. This is a great make-ahead dish!

For the blue layer:

  • 1 package berry blue gelatin (3 oz)
  • 1 cup boiling water
  • 1 can blueberry pie filling

For the white layer:

  • 1 package lemon gelatin (3 oz)
  • 1 cup boiling water
  • 8 oz cream cheese, softened
  • 1 cup whipped cream or Cool Whip

For the red layer:

  • 1 package cherry gelatin (3 oz)
  • 1 cup boiling water
  • 1 can cherry pie filling

Instructions
 

  • Spray a 13×9-inch casserole dish with cooking spray.
  • Dissolve the berry blue gelatin in 1 cup boiling water. Stir in the blueberry pie filling.

  • Pour into the prepared dish. Refrigerate until set, about two hours.
  • Dissolve the lemon gelatin in 1 cup boiling water. Add the cream cheese and beat with a hand mixer until smooth. Fold in the whipped cream or Cool Whip.

  • Spread over the blue layer. Refrigerate until set.
  • Dissolve the cherry gelatin in 1 cup boiling water. Stir in the cherry pie filling.

  • Spread over the lemon layer. Refrigerate until set.
  • Cut into squares and serve.

Notes

Be sure to leave enough time for the layers to set (about two hours per layer) so they don’t run together!
You can make this up to two days ahead. Any leftovers will keep in the fridge for about one week. This dessert does not freeze well.
