This easy Strawberry Jell-O Cake is bursting with strawberry flavor, from the tender cake to the creamy strawberry frosting on top. It’s a nostalgic dessert that starts with a box of cake mix to keep it simple.


This classic Strawberry Cake caught my eye more than a handful of times across the spiral-bound cookbooks in my collection. My hunch is that it originated as a Jell-O creation (much like the beloved Jell-O Poke Cake), designed to sell more gelatin back in the day.
It’s a clever shortcut recipe that begins with a box of cake mix, plus a box of strawberry gelatin which gives it that vibrant pink color and extra strawberry flavor. The frosting is a simple homemade buttercream with fresh strawberries mixed right in. The frosting is so delicious that I think I’ll try it on my chocolate mayo cake next!

Ingredients

- When I’m making older recipes, I always use Duncan Hines cake mix. It has 15.25 ounces, which more closely replicates the size of cake mixes when this recipe was developed (18 ounces).
- You’ll need the small box (3 ounces) of strawberry gelatin for this recipe.
- You can use either fresh or frozen strawberries. They will go in the cake and in the frosting.
How to Make An Easy Strawberry Jell-O Cake
- Combine the white cake mix, one box of strawberry gelatin, eggs, vegetable oil, water, and strawberries in a large bowl, and beat with a hand mixer to combine.
- Bake for 30–35 minutes at 350°F.
- When the cake is cool, beat together the powdered sugar, butter, remaining strawberries, and salt until light and fluffy.
- Spread over the cake. Serve right away or store in the refrigerator until ready to serve.
Storing the Cake
Due to the moisture content of the strawberries, this cake will keep at room temperature for a day or two, but after that it should be stored in the refrigerator.

Easy Strawberry Jell-O Cake
Ingredients
For the cake:
- 1 package white cake mix
- 1 small box strawberry gelatin (3 ounces)
- 4 eggs
- 1 cup vegetable oil
- ½ cup water
- ¾ cup sliced strawberries fresh or frozen
For the frosting:
- ½ cup unsalted butter, softened (1 stick)
- 3 cups powdered sugar
- ½ cup finely chopped strawberries fresh or frozen; defrost if frozen
- ⅛ teaspoon salt
Instructions
- Preheat oven to 350°F. Grease a 13×9-inch baking dish with cooking spray or butter.
- In a large bowl, combine the white cake mix, one box of strawberry gelatin, eggs, vegetable oil, water, and strawberries. Beat with a hand mixer for 2 minutes.1 package white cake mix, 1 small box strawberry gelatin, 4 eggs, 1 cup vegetable oil, ½ cup water, ¾ cup sliced strawberries
- Pour into the prepared pan. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
- For the frosting, place the butter, powdered sugar, finely chopped strawberries, and salt in a large bowl. Beat with a hand mixer until smooth and fluffy, about 2 minutes.½ cup unsalted butter, softened, 3 cups powdered sugar, ½ cup finely chopped strawberries, ⅛ teaspoon salt
- Spread the frosting over the cooled cake. Cut into slices and serve.
