Bacon Wrapped Smokies

This 3-ingredient appetizer is ALWAYS a hit! Bacon Wrapped Smokies with brown sugar are the perfect combination of savory and sweet.

Bacon wrapped appetizers had a heyday in the 1970’s and 1980’s (see: bacon wrapped meatballs and bacon wrapped dates, among others). These Bacon Wrapped Smokies are yet another of the delightful recipes that came out of those decades.

Best of all, they’re seriously easy: just three ingredients and simple instructions.

I updated the typical recipe slightly, because I’m 100% pro-crispy bacon. There’s no soggy bacon to be found here! The method results in easier clean-up, too.

Ingredients

I love a short ingredient list!

  • Lit’l Smokies (or a store-brand equivalent) are perfect here. You can cut hot dogs into thirds or quarters if you can’t find them.
  • Use your favorite brand of bacon. You can use regular or thick cut, you’ll just need to adjust the time if you use thick cut.

How to Make bacon Wrapped Smokies

Start by cutting bacon into thirds. Then, roll a smokie into each slice of cut bacon.

Next, liberally roll the bacon wrapped smokies in brown sugar, and secure with a toothpick. Place on a greased wire rack set on top of a foil-lined baking sheet.

Bake at 400°F for 20–30 minutes (closer to 40 minutes if you’re using thick cut bacon), or until the bacon is crisp all the way around.

My tips for Minimal Cleanup

Nothing is worse than trying to clean burnt sugar off of a pan! Follow these steps for the easiest cleanup:

  1. Line a baking sheet with foil.
  2. Top the baking sheet with a wire rack sprayed with cooking spray. The cooking spray ensures that the appetizers won’t stick to it, and the wire rack helps the appetizers get crispy on the bottom, too.
  3. After baking the appetizers, let the bacon grease cool completely on the pan, then just life the foil off and toss it in the garbage. I clean my wire rack in the dishwasher.

Ingredients
  

  • 12 oz bacon
  • ¾ cup brown sugar
  • 1 14 oz package Lit’l Smokies

Instructions
 

  • Preheat oven to 400°F.
  • Line a baking sheet with aluminum foil. Spray a wire rack with cooking spray, and place on top of the baking sheet.
  • Cut the bacon into thirds.
  • Roll each Lit’l Smokies sausage in a piece of the sliced bacon.
  • Generously roll the bacon wrapped smokies in the brown sugar. Secure with a toothpick.
  • Place the bacon wrapped smokies on the prepared wire rack.
  • Bake for 20–30 minutes, or until the bacon is crisp (this varies widely on the brand/variety of bacon used).

Notes

If you use a 16-oz package of bacon, you’ll have a few slices leftover. I guess that means bacon for breakfast tomorrow! 
You can use thick cut bacon here. Increase the cooking time to closer to 40 minutes. If you do this, you may want to soak the toothpicks in water for 15 minutes to ensure they don’t burn. 
Don’t have a wire rack? Just bake directly on the foil. 
Want to jazz these up? Add ½ teaspoon of paprika, smoked paprika, OR cinnamon to the brown sugar before rolling. You can also make them a little spicy with cayenne (start with ¼ teaspoon of that). 
Many recipes for these say to put the bacon wrapped smokies in a 13×9-inch pan and sprinkle the brown sugar on top before baking (instead of individually rolling them in the brown sugar). That, of course, works just fine! I prefer the wire rack method above because it’s less messy and the smokies get more evenly coated, but do what works for you.

  1. i want to make the bacon wrapped smokies for a party but if i put them in a crockpot on warm will the bacon still stay crispy?

    1. I haven’t tried it, but I suspect it will stay crispy (or at least close to it).
