With just five ingredients, this classic recipe for No Peek Chicken is seriously easy! Just mix, bake, and serve this nostalgic dish for a simple and comforting dinner.

This Easy No Peek Chicken is one of those recipes that instantly takes me back to childhood dinners. It’s the kind of comforting, no-fuss meal that someone’s mom or grandma always had in her rotation (or perhaps it was in your own rotation). No Peek Beef Stew is another one of those classics from the “no peek” era!
For this recipe, everything goes into one baking dish, you cover it with foil, and that’s it. No peeking while it cooks! Two hours later, you have fall-off-the-bone chicken and perfectly cooked rice in a creamy sauce. The edges of the rice, where the rice meets the pan, even get a little crispy. That’s my favorite part!
I love how easy this dish is for busy nights when I want something warm and familiar without a lot of effort.

What You’ll Need

- A can of cream of mushroom soup can transform any recipe. You can use any “cream of __” soup that you like here (cream of mushroom, celery, chicken, etc.)
- I used a whole raw chicken that came already cut up. Chickens are getting larger, so the wings didn’t fit in the pan, but the breasts, thighs, and legs all did. I saved the wings for stock. You can also use whatever bone-in chicken pieces that you have.
- I found no peek chicken recipes that called for either long-grain white rice or Minute Rice. Either will work in this recipe. I used long-grain white rice.
- A packet of Lipton onion soup mix flavors the dish. You’ll have another packet in the box, which I highly recommend using in these French Onion Soup Potatoes.
How to Make Easy No Peek Chicken
- Mix the rice with both cans of soup and 1 cup water. You can do this right in the casserole dish.
- Nestle the chicken pieces into the rice. Sprinkle the packet of onion soup mix over the top.
- Cover with foil and bake for 2 hours.
- Serve!
Reheating and Freezing
Here’s another thing that makes this no peek chicken so easy—the leftovers reheat nicely in the microwave. You can also freeze any leftovers for another night.
